 Quinoa Salad with Roasted Vegetables and Feta Cheese




Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 red onion, cut into wedges
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
  • 2 tablespoons red wine vinegar

Instructions:

  1. Preheat the oven to 400°F.

  2. In a medium pot, combine the quinoa and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, until the water is absorbed and the quinoa is tender.

  3. While the quinoa cooks, toss the onion, bell peppers, zucchini, and eggplant with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for 20-25 minutes, until tender and slightly charred.

  4. In a large bowl, combine the cooked quinoa and roasted vegetables. Add the crumbled feta cheese, chopped herbs, lemon juice, and red wine vinegar. Toss to combine.

  5. Taste and adjust seasonings as needed. Serve warm or chilled.
